The Gobi Power Bar Recipe: Your New Favorite Healthy Snack

Hello, gorgeous Gobi community! As a busy mom of two here in George, I know the struggle of finding healthy, affordable snacks that the whole family will love. That's why I'm beyond excited to share my family's favorite protein bar recipe with you today!
Why I Created the Gobi Power Bar
Living in George, Western Cape, I found myself constantly reaching for expensive store-bought protein bars until I realized I could make something better, healthier, and more budget-friendly at home. My kids absolutely love these bars, and they've become our go-to snack for busy days, post-workout fuel, or when we're exploring the beautiful Garden Route.

Let's Make Some Gobi Power Bars!
Ingredients

1 cup (100g) protein powder (whey, casein, or vegan)
⅓ cup (30g) oat flour
⅓ cup (80g) natural peanut butter
¼ cup (60g) Greek yogurt
3 tbsp (60g) maple syrup
Optional: A handful of dark chocolate chips
Pinch of salt (if using unsalted peanut butter)
Simple Steps
Mix Your Base:
Combine protein powder and oat flour in a large bowl
Add peanut butter, Greek yogurt, and maple syrup
Mix until you have a smooth, uniform dough
Perfect Your Texture:
Too crumbly? Add a spoonful more peanut butter
Too sticky? Sprinkle in more oat flour
The perfect consistency should feel like cookie dough
Shape and Set:
Line a 15x15cm dish with parchment paper
Press mixture evenly into the pan
Pop it in the fridge for 1 hour
Slice and Store:
Cut into 9 equal bars
Store in an airtight container in your fridge
